Olive Oil Brownies

Ingredients

½ cup cocoa powder

¼ cup flour

¼ tsp baking powder

¼ tsp salt

½ cup Serjella Virgin Olive Oil

150 g dark chocolate, chopped

1 cup sugar

2 eggs

1 tsp vanilla extract

½ cup semi-sweet chocolate chips

½ cup grated pistachio

Preparation

  • Preheat oven at 175°C.
  • Sift the cocoa over a small bowl and then sift the flour over the same bowl. Add baking powder and salt. Mix to combine and set aside.
  • In a small pot, heat the olive oil and then add the dark chocolate chunks. Cook stirring continuously until melted completely. Remove from heat.
  • Pour the melted chocolate in a big bowl. Add sugar, eggs and vanilla extract. Mix to combine.
  • Add the cocoa mixture and mix well until combined completely.
  • Add the chocolate chips and pistachio. Mix to coat.
  • Pour mixture in a rectangle oven tray lined with baking paper.
  • Bake in the preheated oven for 35 minutes.
  • Garnish with grated pistachio, let it cool and then cut it into squares. Serve.
