Lamb Souvlaki

Grilled Lamb Souvlaki

 Ingredients

1 cup onion wedges

1 cup whole mushrooms, button

1 cup cherry tomatoes

¼ cup dried oregano

1 cup Serjella Extra Virgin Olive Oil

250 g lamb cubes

¼ cup balsamic vinegar

Salt and pepper

1 tbsp ground cumin

1 tsp garlic, finely chopped

1 cup onion slices

 Preparation

  • In a small bowl, mix onion wedges with mushroom.
  • Add ¼ cup of the olive oil, 1 teaspoon of the dried oregano, and 1 teaspoon of salt. Mix to combine.
  • In another small bowl, mix the cherry tomatoes with ¼ cup of the olive oil, 1 teaspoon of the dried oregano, and 1 teaspoon of salt. Mix to combine.
  • In a big bowl, mix the lamb cubes with onion slices and chopped garlic.
  • Add ½ cup of olive oil, 1 teaspoon dried oregano, 1 teaspoon salt, 1 teaspoon black pepper, ground cumin, and balsamic vinegar.
  • Mix well to coat the meat and onion completely. Cover and refrigerate for 1 hour.
  • Soak wooden skewers in water for 30 minutes before grilling.
  • Using the sharp side of the skewers, pierce each piece of the meat and vegetables and slide it to the end.
  • Arrange a stack in the skewers, alternating meat with vegetables.
  • Heat a stove griller then brush it with olive oil.
  • Grill the skewers for 10-12 minutes on all sides.
