Fusilli alla Caprese


2 tbsp Serjella Extra Virgin Olive Oil

500 g fusilli pasta

¼ cup Serjella Extra Virgin Olive Oil

2 garlic cloves, minced

3 cups chopped cherry tomatoes

Salt and pepper

1 cup fresh basil

1 cup mozzarella cheese cubes

¼ cup lemon juice


  • Add the pasta to a pot of boiling water. Add 2 tablespoons of olive oil and 1 teaspoon of salt. Cook the pasta according to pack instructions.
  • Drain the pasta from water and set it aside.
  • Heat ¼ cup of olive oil in a sauce pan on medium heat.
  • Add the garlic and cherry tomatoes. Season with salt and pepper.
  • Cook for 4 minutes until the tomatoes are squashy. Smash them with a fork.
  • Add the cooked pasta in a big bowl. Add the tomato mixture and mix to combine.
  • Add fresh basil and mozzarella cheese. Mix to combine. Serve.
